Can Cooked Beef Sit Out Overnight?

Last reviewed: May 2026

Quick answer

No. Cooked beef left out overnight must be discarded. The USDA recommends refrigerating all cooked meat within 2 hours of cooking — or 1 hour if the ambient temperature is above 90°F (32°C). Overnight (8 or more hours) far exceeds that limit regardless of the cut: steak, roast, ground beef, brisket, or any other preparation.

Bottom line: discard it

Cooked beef left out overnight has far exceeded the USDA 2-hour safe limit. Discard it — reheating will not make it safe.

The USDA 2-hour rule for cooked beef

The USDA recommends discarding all perishable cooked meat — including beef — that has been left at room temperature for more than 2 hours. At temperatures above 90°F (32°C), that window shrinks to just 1 hour. In the temperature danger zone between 40°F and 140°F (4°C–60°C), bacteria can double roughly every 20 minutes. See the official food-safety sources used by StillSafeFood for references.

This rule applies to all beef cuts and preparations: steaks, roasts, ground beef patties, brisket, short ribs, meatloaf, and beef-based dishes. A thick cut does not stay safe longer — what matters is how long the food spends in the temperature danger zone, not how thick or dense it is.

Why reheating doesn't help

Reheating cooked beef to a safe internal temperature kills most live bacteria. However, it does not destroy the heat-stable toxins that bacteria such as Staphylococcus aureus and Bacillus cereus may have already produced during the hours at room temperature. If those toxins are present, the beef is unsafe regardless of how thoroughly it is reheated.

Safe storage for leftover beef

  • Refrigerate cooked beef within 2 hours of cooking (1 hour above 90°F).
  • Store in a shallow, airtight container at or below 40°F (4°C).
  • Consume refrigerated cooked beef within 3–4 days.
  • Freeze portions you will not eat within 3–4 days.

Frequently asked questions

Can cooked beef sit out overnight?

No. Cooked beef left out overnight far exceeds the USDA 2-hour safe limit. Discard all cuts — steak, roast, ground beef, and brisket.

How long can cooked steak sit out?

No more than 2 hours at room temperature (1 hour above 90°F/32°C), per USDA guidelines.

Can I reheat beef left out overnight to make it safe?
